Emoji are Unicode code points, which is why the same character looks different everywhere — each platform ships its own artwork for the same underlying value. It is also why some appear as a box: the code point exists but the font on that device has no glyph for it.
Many are sequences rather than single characters. Skin tones are modifiers appended to a base emoji, and family and profession emoji are several code points joined by zero-width joiners — which is why deleting one can take several presses, and why a platform that does not know the sequence renders its parts side by side.
