Unit conversion is multiplication except where it is not, and temperature is the exception that catches people: Celsius to Fahrenheit needs an offset as well as a scale, so a temperature difference converts differently from a temperature. Ten degrees warmer is not fifty degrees Fahrenheit.

The others have their own traps. US and imperial gallons differ by about twenty percent, which is why fuel-economy comparisons between countries are so often wrong. Ounces are both mass and volume depending on context, and the fluid one differs between the US and the UK. Naming the exact unit matters more than the arithmetic.
