A device frame does two things a raw screenshot cannot. It gives scale, so a viewer knows immediately whether they are looking at a phone or a desktop, and it separates the interface from whatever surrounds it — a screenshot placed directly on a page has a hard edge that competes with the page's own layout.

App store listings and press kits generally require framed images at specific sizes, which is why this is one of the most repeated chores in shipping an app. The watermark question matters for the same reason: an image with someone else's brand on it is not usable in a store listing.
